Blame it on my Giovanni-Kitchen entry, I was subdued to bake or cook something special at my humble kitchen
cum dining area. As we were run out of fresh meats in the fridge due to late-morning-weekend-syndrome, I managed to find baking basic items in my multipurpose cabinet-flour, sugar, eggs, chocolate chips, baking soda; and butter , cream cheese and fresh milk in the refrigerator, then I decided to bake a home-made chocolate muffin with cream cheese frosting.
1 Cup Sifted all purpose flour
2 Cup of Cocoa powder
3 Large Fresh Eggs
1 1/2 Cups Sifted Confectioners' sugar
1 tablespoon Baking Soda
1 3/4 Cup Fresh milk
1 block of butter
A pinch of Salt
Half tablespoon Ovallete
1 teaspoon Vanilla extract
2 packets chopped hazelnut & oatmeal cookies from Munchy's
*Not the exact amount of ingredients . I modified them accordingly.
For the Cream Cheese Frosting
8oz package of Cream Cheese, softened
2 sticks of butter, softened
2 Cups Sifted Confectioners' sugar
1 teaspoon Vanilla Extract
With these simple ingredients, I added everything together in a mixing bowl, beat them, stir them until fluffy and creamy, bake them and there you go, my homemade muffins! Test it with the toothpick for doneness.
Grease the pan, fill the mixture half or 3/4 of the muffin cup.
Bake it at 160-170 degrees with upper and lower heat.
Wait till they crack. I love seeing the cracked muffin top, with the smell of chocolate aroma filling the whole house.
Fresh from the oven, the naked truth muffin, in cool down mode before the cream cheese frosting being pipe in.
I left my muffins for 30 seconds and they are raped by Kekasyfi Hati; See, my poor muffins without their crispy & crunchy top part! Can I name these two CHINTA and Osman Kabilah? =p
Ok, now they're dressed up with creamy cheese frosting and dolled with blended oatmeal cookies. Ouh, heaven.
*I've no piping bag, so they end up like this, smear here and there.
1st batch, refrigerate in freezer.
